Hasselback Potatoes

Ingredients

Hasselback potatoes are a type of baked potato where they are cut more than two thirds through into thin fan-like slices while still intact

and attached at the bottom. The peel remains on the potato. They were created in 1953 by Leif Ellison at the Hasselback restaurant in

Stockholm.


Potatoes (as many as you want to serve)

Extra Virgin Olive Oil or melted butter (enough to coat each potato well)

Sea salt

Pepper

Directions

  1. Preheat oven to 425 Degrees
  2. Cut potatoes, with the peel on, almost all the way through, creating thin slices that look like a fan when you are done.
  3. Drizzle olive oil or melted butter, sea salt and pepper over the entire potato and into the cracks between the fanned slices.
  4. Place potatoes in a baking dish and bake for at least 40 minutes or until the potato is thoroughly cooked and starts to brown. If you like crunchy slices, leave it in the oven longer
  5. Various toppings can be added, as desired. Examples are breadcrumbs, caraway seeds, paprika, cheese.
