Directions
- Preheat Oven to 400 degrees
- Cut Spaghetti Squash in half lengthwise. Use a large, sharp knife. The skin can be very tough and it may take time to penetrate it.
- Using a spoon, scrape out all the seeds and stringy flesh
- Place the two halves in a roasting pan with the outer skin facing up and the fleshy part facing the bottom of the pan (concave part facing down). Fill the pan with water 1/8 -. the way up the squash.
- Place the roasting pan in the oven. Bake 30-50 minutes until a fork can penetrate the outer skin and easily go into the flesh.
- Take the roasting pan out of the oven and remove the spaghetti squash halves.
- Using an oven mitt or dish towel to handle the hot squash, take a fork and scrape the “pasta shaped” flesh out lengthwise into a bowl. Scrape all of it out of both halves.
- Toss the “pasta” with olive oil.
- Use as a spaghetti and put sauce on it (meat sauce, marinara sauce, pesto, clam sauce, or any other creation.)
- Use as a side dish or main course.
I often use olive oil, salt, pepper and parmesan cheese and serve as a side dish with chicken, fish, or meat.
You can also use it cold for a “pasta” salad
