Stuffed Mushrooms

Organic products whenever possible

Ingredients

12 Large or 24 Small Mushrooms (White, Button Cap or any you like)

1 TB Butter (can use extra virgin olive oil)

2 TB Extra Virign Olive Oil

1 tsp onion, minced

1 clove garlic, minced

1 TB parsley, minced

1/4 Cup Bread Crumbs (gluten free preferred)

1/2 tsp sea salt

1/8 tsp pepper

2 TB Hot Water

2 TB grated Romano or Parmesan Cheese

Directions

  1. Clean mushrooms and remove stems
  2. Mince the stems finely
  3. Heat Butter and 1 TB oil in skillet
  4. Add minced stems, parsley, onion and garlic and cook until lightly browned
  5. Stir in bread crumbs, salt, pepper and water. Work it until the mixture clings together and then remove from the heat
  6. In a greased baking dish arrange mushroom caps with concave side facing up
  7. Fill each cap with mixture
  8. Brush with oil and sprinkle with cheese
  9. Bake at 400 degrees 10-15 minutes
